Born from the desire to let customers touch the products used for leavened products, this space has become an integral part of our offer over time. Autoctona allows you to enrich your table with quality food where research becomes a fundamental ingredient. The space is dedicated to local products and indigenous products from all over Italy. It also houses our cellar where you can freely buy the wines offered on the menu. Autoctona is also an artisan oven where the "Pane del Vatti" is born. A wood-fired bread with living sourdough made of wholemeal flours from sustainable and climate-controlled agriculture managed by Molino Quaglia. Thanks to its many uses it is appreciated by those who make bread the main food of their table from breakfast to after dinner snack.
